Description
The Ruffoni Company was established in 1962 in the town of Omegna located at the foot of the Alps on Orta Lake. Ruffoni's primary aim is to achieve very high quality standards, in compliance with FDA lead and cadmium regulations worldwide. The Ruffoni team uses recyclable materials for their products. They opt for exacting manual techniques rather than cheaper chemical and mechanical manufacturing procedures.
The copper pot can be considered the "Queen of Pots" thanks to its natural and excellent heat conductivity which is higher than aluminum and stainless-steel. Temperatures are rapidly reached and transfer evenly from the bottom of the pan to the sides. Flavors and nutritional values remain unchanged and food doesn't stick to the bottom of the pan, avoiding hot spots and burning. Professional chefs prefer this type of metal because it is the best for cooking delicate dishes and for confectionary creations.
The handles are produced in brass with the ancient method of mold melting and polished by hand one by one. The rivets are very thick and made in steel alloys not to be subjected to corrosion. Low sides encourage evaporation and the wide surface facilitates absorption of broth. Copper conducts heat superbly and its tin-lined interior will not affect the flavor of foods. Spout pours the risotto from pot to bowl. Solid cast iron riveted handle transfers the pot from stovetop to table. The wooden risotto spoon (included) is designed with a hole in the center for maximum absorption of liquid. Made in Italy.
